Grantville has much greater population than Mannington. As a result, it also has a whole lot more restaurants. However, it’s also in a different climate without food being shipped in from all over the world. As a result, they have different foods available. 1632 Universe food availability lists the foods we know are (or are not) available in the 1632 Universe. Please note that while other similar sauces (fish sauce in particular, I’m told) may be available, soy sauce is not available in the post-RoF Universe until a group of immigrants arrive from Japan, and that takes several years. Regardless of what ingredients for making soy sauce are available in Grantville, the process and knowledge to make it simply is not. People with that knowledge have to move there.
